Shrimp & Parmesan-stuffed Eggplant: 9 points

My days of thinking eggplant = babaganoush are so over! First I fell in love with Roasted Eggplant with Saffron Yogurt, Basil, & Pine Nuts (which is now officially on my List of Specialties), and now this. I admit, eggplant has never been high on my list of favorite foods.
